As a type one diabetic, I am always looking for new foods and recipes that are low in carbohydrates. Things like pasta, pizza, pancakes, and other food with a high carb count are always tricky for diabetics. I have discovered many different foods that can serve as an alternative for those high carb foods.
I wanted to share some of those foods with you, and ALSO give you all a chance to share YOUR discoveries and ideas! Also, if you have a certain food in mind that you'd love to find a low-carb alternative for.. post it here. Perhaps someone can come up with something.
Here are some low carb foods that I love:
A good alternative for pasta.
Noodles made from tofu that are EXTREMELY low carb, low fat, and low calories.
Pancakes made from JUST EGGS!
Low carb SNACK ideas:
-Nuts (Almonds, cashews, peanuts..)
Coat with cinnamon and splenda, and roast in the oven for flavor!
-Cheese (regular or vegan)
-Grilled or steamed vegetables
-Celery or Carrots dipped in peanut butter
